Abstract

Abstract Bacteriocin produced by lactic acid bacteria (lactobacillus lactis) isolated from fresh cow milk, showed broad spectrum of antibacterial activity against gram- positive bacteria (Staphylococcus aureus and gram- negative bacteria Escherichia coli, Salmonella typhimurium). Maximum Bacteriocin production was observed at 35c, pH 5.5 and 20h of incubation period.
